Scrumptious Tiramisu Protein Pancakes

There's nothing wrong with having Tiramisu pancakes for breakfast, especially if they are packed with protein and filled with low-fat creamy banana cream frosting. These fluffy pancakes are so delicious that you won't even need maple syrup. Best of all, they are so simple to make! Give them a try and let us know what you think.

INGREDIENTS (makes 3 pancakes)


  1. For the pancakes: Heat a non-stick skillet or pancake griddle over medium heat.
  2. In a small food processor or blender, ground oats into flour.
  3. Combine oat flour, protein powder, ground flax, and baking powder in a bowl. In a separate bowl, whisk egg white until frothy.
  4. Add coffee and vanilla extract to egg white, stir and add to dry ingredients. Stir until flour is incorporated.
  5. Let batter sit at least 5 minutes before continuing. Spoon batter onto skillet surface, forming 3 medium-sized pancakes.
  6. Cook 5-6 minutes per side, or until golden brown with crisp edges.
  7. For the sweet "cream" filling: Combine cottage cheese, banana, and extract in a small food processor or blender and blend until smooth.
  8. Spread a layer of filling between each pancake and dust lightly with cocoa powder.
